After jamming my freezer to the point it only just scraped closed, we decided to buy a chest freezer that is kept outside our laundry. And it is amazing!! I meal prep, smoothie prep, breakfast prep and ingredient prep a lot and freeze it all! This is great because then you literally pull stuff out of the freezer and can simply defrost to put in cooking, blender, lunch packs or smoothies.
I also like to have meat options available in meal portions so a larger freezer is brilliant as we go in for a portion of an organic cow and the butcher has pre cut and prepared everything for us. I fill up the freezer with this bulk purchasing option and don’t have to think too much that week about the exact meals I’ll be making and what meat I need. It also means there is more room for the cooked meals I have pre made and frozen which helps in our busier weeks!
This summer I am also hoping to buy big bulk trays of berries from the markets when they are at their cheapest and freeze them in smaller bags too, now we have the space to do this I am really excited!
THINGS I PREP & FREEZE
If they are going soft I peel them and freeze them ready to put in smoothies, ice cream blends, breads and cakes.
As it doesn't always last super long in the fridge I freeze both whole leaves (for cooked meals) and blended versions frozen in ice trays (for smoothies).
Sometimes I freeze them in 'weekly portions' basically a small- medium size zip lock bag that I pull out and keep in the fridge so I always have defrosted berries on hand for granola cups, muesli topping, and fruit salads.
LEFT OVER VEGGIE BAGS
If I have too many veggies left at the end of a week I chop them up and freeze them in combinations for my stock mixes, this saves money buying extra ingredients when my stock runs out and they are already prepped to just throw into the Thermomix. Often stock is something I'll suddenly run out of so it's really great to be able to pull things out of the freezer and make a new batch when I need it.
ALL OUR MEAT
We cut and freeze it in meal sized portions so I don't have to cut meat when cooking a meal. This might be diced chicken, strips of beef, portioned amounts of mince etc.
I grate large blocks of Parmesan in the Thermomix and keep them in zip lock bags in the freezer so I can grab and mix into pastas or sprinkle on dishes quickly.
If I have left over pasta sauce from a batch I freeze it in small portions to use for toddler dinners where the main meal isn't appropriate. That way all I have to do is grab one out and stir it through a handful of pasta and serve.
I prep most fruit/veg ingredients and freeze them in zip lock bags for 1-2 smoothie portion sizes. I also freeze blended avocado, coconut cream, coconut milk, banana, mangos for smoothie extras.
Sometimes if I'm super organised I shred and freeze zucchini or broccoli in bags too as they defrost super quickly and are a great addition of greens to either a soup or main meal.
I usually also keep a tray of frozen blended things in ice block size for teething babies and toddlers this often includes veggies, fruit, yoghurt, smoothies, and even veggie soup.
MEALS I FREEZE REGULARLY
I will pre make these on an energetic day or if I made too much in the slow cooker. I usually cook lasagnes, soups, stews, casseroles, and bulk meat dishes like mexican mince or bolognaise so I can pull them out for whatever dinner I decide to make that night. I pull them out at breakie time and they're ready to just heat in either the oven or stove and add to pasta or have with a salad.
