When it gets to the end of the week and what's left in my fridge doesn't really make sense, its time to make this soup!
Pretty much any veggies you've got can go into this recipe and it makes a quick and easy Saturday lunch.
This recipe is from the Thermomix Basic Cookbook.
300 g Potatoes, cut into 3cm pieces
1 Tomato, cut in half (or 4 cherry tomatoes if you don't keep big ones)
80 g Onion, cut in half
1-2 Cloves Garlic
400 g Mixed veggies (whatever you have: i.e. Leek, carrots, pumpkin etc)
1 Tbsp Homemade Thermomix Vegetable Stock Paste
Sea Salt & Black Pepper to taste
600 g Water
20 g Light Olive Oil
1. Place all ingredients except the olive oil into the TM Bowl and cook 25 mins/100/Speed 1.
2. Add the olive oil and blend 1 min/speed 5-10 gradually increasing the speed.
3. Eat & enjoy!
